Taleggio

Taleggio DOP is a soft cheese with a washed red rind. This cheese comes from the Taleggio Valley in Bergamo, Lombardy (Italy). Taleggio cheese has streaks in its orange-pink rind, with blue-gray mold spots. Both the rind and the parchment paper wrapping the cheese are edible. The cheese has a creamy texture, and its flavor is deliciously mild, slightly sweet, and a combination of almonds and white truffles.
